The success of a recipe depends mainly on the quality of the materials. Especially in legumes, the quality and the freshness are the most important to make a delicious dish. I only knew the village Tsotili Kozanis as the origin village of a very good friend. I didn't know that they grow there the perfect lentils. Recently some relatives from Prespes brought me lentils from Tsotili Kozanis and I think they are the most delicious lentils I've ever tasted. Accidental? They are fresh because they are bought directly by the producer? I don't know ... But these lentils can't fail with any recipe!
